The cherry and papaya notes are really bright and lively, but the brown sugar sweetness balances everything smoothly. This is probably the most interesting coffee I've brewed this month, and it works great as a pour-over.

The cherry and papaya notes hit you right away, but it’s not tart—just a bright, clean acidity that lingers. I’ve been brewing it in my AeroPress and the brown sugar finish makes it feel almost dessert-like.

I was hoping for a bit more of that papaya brightness, but the brown sugar sweetness balances it out nicely. The beans ground up beautifully fine and brewed a smooth, rich cup.
